Looking to layer complexity and delicacy, the 2024 ‘tell your sister’ is composed of two distinct Colombard picks, and two distinct fermentations. The early pick (in the second week of September) was not truly fermented on skins. The fruit was crushed at the winery, wrapped up with some dry ice to protect it, and left to cold soak for four days. After four days it was cracked open, and since fermentation was just beginning to rip, it was pressed immediately. The pressed juice was then fully fermented in stainless steel, and once dry was barreled down to neutral oak to age.
The second pick of Colombard (in late September, almost 3 weeks later) was also foot crushed, but with the intention of a full skins fermentation. Over the course of 10 days it went nearly sugar-dry, at which point it was basket pressed into tank, where it spent a few more days fermenting to total dryness. It was then also barreled down to neutral oak.
Both portions were age separately over the winter, then blended in March before bottling. At blending, the two components were vastly different. The cold soak Colombard was textured, but pale in color and only lightly tropical on the palate. The 10 day skin ferment was sappy, intensely aromatic and dark orange in color. Together, they complement and fill one another out.
Indigenous yeast fermentation. 10 ppm SO2 added at bottling, no other additions, unfined and unfiltered.
