As always for these grape/apple coferments, the apples were picked and pressed by my friends at Tilted Shed, who graciously gave me a few kegs of Jonathan juice to work with.

Once back at the winery, the Jonathan juice was poured over a small quantity of the first pick of the pink lemonade field blend (Abouriou, Zinfandel and Colombard). The grapes were slightly crushed before the juice was added, then all of it was left to ferment together for 5 days.  At that point, the mixture was drained and pressed, and the grape/apple wine continued to ferment in a stainless steel barrel.

Once the sugar dropped to 15 g/L, the wine was bottled under crown cap and left to age sur lees for 3 months.  The bottles were riddled in early January, then disgorged in late February.

Indigenous yeast fermentation. No added sulfur, no other additions, unfined and unfiltered.
